Grated Beets with Walnuts

Beets...when you're a kid you hate them.  When you grow up you love them.

Summer beets at my local farmer's market in Tahoe City, CA.  


If you're craving beets, here's a simple prep method I use all the time.  It's easy, delicious and quick.



Beets with Walnuts

3 beets peeled
2 T grass-fed butter
1 T Coconut Nectar (from Coconut Secret--available at Whole Foods and natural food stores)
Fresh ground sea salt and black pepper to taste
½ c chopped walnuts
1 ½ T lemon juice freshly squeezed
1 T grass-fed butter (optional)


Put the grater attachment in your food processor.  Cut the beets into pieces small enough to fit into the processor feeder tube.  Grate the beets.  Melt 2 T grass-fed butter in a sauté pan over medium heat and add the beats.  Cook stirring occasionally for about five minutes or until beets are softened.  Add the coconut nectar, salt, pepper, walnuts and lemon juice.  If desired, melt another tablespoon of butter into the beets and serve.  

Beets are a great anti-inflammation food, but to keep the rest of this recipe healing be sure to use only grass-fed butter (it increases those oh-so-important omega-3s), natural sea salt (table salt is not healthy but natural sea salt is very healing), Coconut Nectar (my favorite low-glycemic sweetener) as well as making sure you buy the best beets, walnuts and lemons you can find or afford.  Organic is always preferred, of course!
